I like em all but Destruction's pretty cool. I also like Delirium, but am also frustrated at her lack of depth (there's barely anything about her being Delight, or how/when she changed, etc)
Death, but Destruction and Delirium are close seconds. I like Dream too... but he's so emo sometimes. Really the only one I don't care for is Destiny, because he's not the least bit understanding of the others' feelings, he just works. Desire is a bitch, but at least it has feelings.

You can project how much Delirium was Delight when you measure her apparent randomness. Try to think of the exact opposite of who she is right now, and you will gain insight into the nature of Delight.
I believe a great achievement of Gaiman was to show you that there is a game of oppositions here: if you arrange the endless in a circle, they all partially are opposed to each other, and they are also two-sided, so it is always intriguing to figure out what's on the other side of them.
